Somethin' yummy for the tummy

COMFORT FOOD!

What goes best with a damp, gray, wet, cloudy, dull, blecky day? Meat loaf and scalloped potatoes, just like Momma used to make.

While I can cook, at least the basics, I rarely do. There's just me here, so why spend hours preparing food that will take me minutes to eat? Besides, I only know how to cook in proportions for a family of four, which means I eat leftovers for a week.

Still, as I was driving to the grocery store yesterday to pick up a couple of things, I thought, "Meat loaf." And, then, "scalloped potatoes." So, I picked up the ingredients for both, forgetting only onions, and set about pretending to be Mrs. Cleaver.

Meat loaf done.
Time to start the potatoes.

Hey, there's some shredded cheese in the 'fridge.
Let's make these potatoes au gratin!

Looks pretty good, doesn't it?
I'm glad to see I haven't lost my touch.

And we are serving meat loaf and sweet potatoes at the ranch tonight, only our meat loaf is shaped like a penguin. Jeez, KD. Get with the artistic meat loaf program. Pine nut eyes.

Comfort food for me as a child was peanut butter mixed with honey and served with sliced banana on toast. To this day when I am sick that is what I crave like nothing else. Yours sounds pretty good to me though since I am sitting here eating a Lean Cuisine cardboard french bread pizza...part of my New Years Resolution to trim some fat from my hams. LOL

With certain foods, I think it's the smell--filling the house and lingering back in the hallways for days!
When I go out and return--it's still there! Like someone has been cooking for me all day.
I love to enter a wonderfully warm-smelling home!

Comfort food - macaroni and cheese, mashed potatoes, creamed chipped beef over toast - oh yeah, I'm there. Your dinner looks pretty darn good.

Kat, my mom had to adjust from cooking for 4 to cooking for just herself. She sometimes does just an omelet and salad but she likes to eat 'real' dinners. She fixes them and freezes the portions in just big enough sizes for her. We tease her because in her freezer there are single frozen hot dogs, single servings of meat loaf or barbecued pork loin, along with sides. But all she has to do is thaw it out and cook the veggies. She can do biggish dinners on the weekends and have real food all week long.

Now you've gone and done it. You have made me hungry for some good ole augratin potatoes. Maybe I will cook up a big pot of vegetable soup too. No maybe a roast with potatoes, carrots and onions. MMmmmmm I can smell it now. :)

Comfort food: homemade chicken noodle soup that I made yesterday, meat loaf and MASHED potatoes, mashed potatoes, and mashed potatoes. With gravy. Grilled cheese and tomato soup.

Ah, such solace.

Comfort food? Well, here in the heart of PA Dutch central PA, that would be chicken corn noodle soup.
Right now, the college football championship game is on--just after half-time.
I hope you won't need comfort food when the game is over.
